SPICE-RUBBED APRICOT-GLAZED RIBS

Ribs are such a fun feast! These baby back ribs get a massage with a savory-sweet spice rub before they cook in the Instant Pot. They’re finished in the oven with a lovely, tangy apricot glaze. ESV

SERVES: 3 to 4

SPICE RUB

1½ tsp (5 g) garlic granules or garlic powder

1½ tsp (4 g) onion powder

1½ tsp (4 g) chili powder

1 tsp smoked paprika

1½ tsp (2 g) dried thyme

1 tsp maple sugar

1 tsp sea salt

½ tsp freshly ground black pepper

Zest of 1 medium orange

1 rack baby back pork ribs (about 12 to 14 ribs)

1 cup (237 ml) water

½ cup (120 ml) cider vinegar

GLAZE

9 oz (255 g) sugar-free all-fruit apricot jam

¼ cup (60 ml) pure maple syrup or honey

1 tbsp (14 ml) coconut aminos

1 tsp finely minced or grated peeled fresh ginger

½ tsp finely chopped fresh thyme leaves

½ tsp finely chopped fresh rosemary leaves

Prepare the spice rub. In a small bowl, combine the garlic granules, onion powder, chili powder, smoked paprika, thyme, maple sugar, salt, black pepper and orange zest, then stir well. Set aside.

Remove the outer membrane on the ribs and discard. Rub the spice rub all over both sides of the ribs. Cut the rib rack in half to fit in the Instant Pot. Set aside.

Pour the water and cider vinegar into the Instant Pot and insert the steam trivet. Transfer the spice-rubbed ribs into the Instant Pot on top of the trivet, with the meat side facing outward.

Secure the lid with the steam vent in the sealed position. Press manual and set on high pressure for 25 minutes.

While the ribs are cooking, prepare the glaze: In a medium bowl, combine all the glaze ingredients, then stir well and set aside.

Preheat the oven to 400°F (200°C) and have ready a baking sheet.

Once the Instant Pot timer sounds, press keep warm/cancel. Allow the Instant Pot to release pressure naturally for 15 minutes. Using an oven mitt, do a quick release. If there is any steam left over, allow it to release until the silver dial drops, then carefully open the lid.

With tongs, carefully place the rib racks on the baking sheet. Using a basting brush, evenly distribute the apricot glaze mixture all over the tops of the ribs. Bake in the preheated oven for 25 minutes.

Serve immediately.
